Monster Rice Cereal Treats

I don’t try to make these monsters match. Rice cereal treats are bumpy, the coating drips, and a crooked candy eye improves the result.

A thin layer of colored candy coating at one end is plenty. It leaves the familiar buttery cereal underneath and gives us somewhere to attach the faces. I use green or purple, depending on what is on the baking shelf.

Press the cereal mixture lightly into the pan. Packing it down with all your strength makes a tidy slab and a rather strenuous snack. I want people to be able to take a bite without having to think about it first.

Ingredients

  • 4 tablespoons butter

  • 1 bag (10 ounces) mini marshmallows

  • 6 cups crisp rice cereal

  • 1 teaspoon vanilla extract

  • 8 ounces green or purple candy-melting wafers

  • 24 small candy eyes

  • 2 tablespoons sprinkles, optional

Directions

  1. 1

Line a 9-by-13-inch pan with parchment and lightly butter it.

  2. 2

Melt butter in a large pot over low heat. Add marshmallows and stir until just melted. Remove from heat and stir in vanilla.

  3. 3

Fold in cereal until coated. Transfer to the pan and press gently into an even layer with a buttered spatula.

  4. 4

Cool about 45 minutes, until firm. Lift out and cut into 12 rectangles.

  5. 5

Melt candy wafers according to package directions. Dip one end of each treat into the coating and lay on parchment.

  6. 6

Add two candy eyes and sprinkles before the coating sets. Let set completely.

One family tip

Store in an airtight container at room temperature and enjoy within 2 days for the softest texture.
